Coutume, the roaster that helped kick off Paris's third-wave scene, runs the espresso bar tucked inside La Procure's religious bookstore near Saint-Sulpice — shots pulled on a La Marzocco among the shelves, beans roasted on-site to supply other Paris cafés too.
